Strawberry Cake Recipe



Ingredients:

- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1-1/2 cups granulated sugar
- 2 large eggs
- 1/4 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup pureed strawberries
- 1/2 cup milk

For the frosting:

- 1/2 cup butter, softened
- 4 cups powdered sugar
- 1/4 cup pureed strawberries
- 1/2 teaspoon vanilla extract

Instructions:

1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.

2. In a large bowl, whisk together flour, baking powder, and salt.

3. In a separate bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, and beat well after each addition.

4. Mix in vegetable oil, vanilla extract, and pureed strawberries.

5. Gradually add in dry ingredients, alternating with milk, beating until well combined.

6. Divide the batter evenly between the two prepared pans.

7. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

8. Allow the cakes to cool completely in the pans before removing and assembling the cake.

For the frosting:

1. In a large bowl, beat butter until creamy.

2. Gradually add powdered sugar, beating well after each addition.

3. Mix in pureed strawberries and vanilla extract.

4. Beat until light and fluffy.

5. Use the frosting to frost and decorate the strawberry cakes as desired.
