EGGWHITE FONDANT
RECIPE
◾1kg icing sugar of your choice
◾3tsp cmc
◾2tbsp glucose
◾2tbsp water (cold)
◾2egg white
◾colouring and flavouring
METHOD
◾Sieve your icing sugar, cmc and powdered flavour in a bowl
◾Scoop your glucose into a cup of water and mix adequately to make it light, mix thoroughly to combine well, it gives you a misty gummy white colour
◾Break eggs and extract the egg white
◾In the bowl of icing sugar, make a hole at the center and add your wet ingredients, the egg whites and the glucose
◾Combine and mix together till it forms a white blemish free paste...
