Ingredients:

For the Churros:

1 cup water
2 tablespoons granulated sugar
1/2 teaspoon salt
2 tablespoons vegetable oil
1 cup all-purpose flour
1/2 teaspoon vanilla extract
Oil, for frying
For the Coating:

1/2 cup granulated sugar
1 teaspoon ground cinnamon
Instructions:

Prepare the Churro Dough:

In a saucepan, combine water, sugar, salt, and vegetable oil. Bring the mixture to a boil over medium heat.
Remove from heat and add the flour all at once. Stir quickly until the mixture forms a dough that pulls away from the sides of the pan.
Mix in the vanilla extract.
Transfer the dough to a piping bag fitted with a star tip.
Fry the Churros:

Heat about 2 inches of oil in a deep skillet or pot over medium heat. You can test if the oil is ready by dropping a small piece of dough into the oil – it should sizzle and float to the top.
Carefully pipe the churro dough directly into the hot oil, forming small spirals or circles. Fry until golden brown, turning them over to cook evenly, about 2-3 minutes.
Use a slotted spoon to remove the churros from the oil and place them on a plate lined with paper towels to drain.
Coat the Churros:

In a shallow bowl, mix together the granulated sugar and ground cinnamon for the coating.
While the churros are still warm, roll them in the cinnamon-sugar mixture to coat.
