Vanilla Custard Cream Squares

 Ingredients for the base:

 • 1 and 1/2 cups all-purpose flour
 • 1/3 cup powdered sugar
 • 1/2 cup unsalted butter, cold and cut into cubes

 Ingredients for the pastry cream filling:

 • 2 cups of whole milk
 • 1/2 cup granulated sugar
 • 3 large egg yolks
 • 1/4 cup cornstarch
 • A pinch of salt
 • 1 teaspoon pure vanilla extract
 • 2 tablespoons unsalted butter

 Instructions:

 1. Prepare the base:
 • Preheat the oven to 350°F (175°C).
 • Mix the flour and powdered sugar.  Add the butter and mix until you obtain a crumbly dough.
 • Press the mixture into the bottom of a square pan lined with parchment paper.
 • Bake for 15-20 minutes or until lightly golden.  Let cool completely.
 2. Prepare the pastry cream:
 • In a medium saucepan, heat the milk until it is about to boil.
 • In a bowl, beat the egg yolks with the sugar, cornstarch and salt until smooth.
 • Slowly pour the hot milk over the yolk mixture, whisking constantly.
 • Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened.
 • Remove from heat and add vanilla and butter, mixing until melted and combined.
 3. Assembly:
 • Pour the hot pastry cream over the cooled cookie base and smooth the surface.
 • Refrigerate until the custard is firm, at least 2 hours.
 4. Serve:
 • Cut into squares and serve.  If you wish, you can sprinkle with powdered sugar or cocoa before serving for an extra touch.
