Classic vanilla cupcakes


Classic vanilla cupcakes:

Ingredients:

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup whole milk, at room temperature

Instructions:

1. Preheat the oven to 350°F (180°C). Line a 12-cup muffin tin with cupcake liners.
2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
3. In a large bowl, using an electric mixer, beat the butter until creamy. Add eggs one at a time, beating well after each addition. Beat in vanilla extract.
4. Gradually add the dry ingredients to the wet ingredients, alternating with milk, beginning and ending with dry ingredients. Beat just until combined.
5. Divide the batter evenly among the cupcake liners.
6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
7. Allow cupcakes to cool completely in the pan before frosting.

You can customize this recipe with different flavor combinations and frostings! Some ideas include:

- Chocolate cupcakes: Add 1/2 cup cocoa powder to the dry ingredients and use chocolate extract instead of vanilla.
- Red velvet cupcakes: Add 1 tablespoon red food coloring and 1 teaspoon cocoa powder to the batter.
- Lemon poppyseed cupcakes: Add 1 tablespoon lemon zest, 1 tablespoon lemon juice, and 1 teaspoon poppy seeds to the batter.
