Nigerian Puff Puff Recipe

Ingredients:

2 cups (250g) all-purpose flour

1/4 cup (50g) sugar

2 teaspoons (7g) instant dry yeast

1/4 teaspoon salt

1/4 teaspoon nutmeg (optional, for flavor)

1 cup (240ml) warm water (not hot)

Vegetable oil (for deep frying)

Instructions:

In a large bowl, combine flour, sugar, yeast, salt, and nutmeg if using. Gradually pour in warm water and mix until you get a smooth, sticky batter. The batter should be thick but soft enough to scoop.

Cover the bowl with a clean towel or plastic wrap. Leave it in a warm place to rise for about 45 minutes to 1 hour, or until doubled in size and bubbly.

Heat enough vegetable oil in a deep pan over medium heat — the oil should be at least 3 inches deep.

Scoop small portions of the batter using your hand or a spoon and drop gently into the hot oil. Fry in batches to avoid overcrowding the pan.

Fry and turn continuously until puff puffs are golden brown on all sides, about 5–6 minutes per batch.

Remove with a slotted spoon and drain on paper towels. Serve warm as a snack or with a dusting of powdered sugar if desired.
