Cassava Cake.............. ๐๐๐
๐Ingredients
• Cassava (grated) – 500 g
• Coconut milk – 1 cup
• Condensed milk – 1 cup
• Sugar – ¾ cup
• Eggs – 3
• Butter – ¼ cup (melted)
• Grated coconut – 1½ cups
• Sweetened condensed milk – ½ cup
• Vanilla essence – 1 tsp
๐♂️Instructions
1. Preheat oven to 180°C (350°F). Grease and line a baking pan.
2. In a large bowl, combine grated cassava, coconut milk, condensed milk, sugar, eggs, melted butter, and vanilla essence. Mix well until fully combined.
3. Fold in grated coconut and mix evenly.
4. Pour the mixture into the prepared pan and level the top.
5. Bake for 45–50 minutes or until set and lightly golden.
6. Remove from oven and pour the additional sweetened condensed milk evenly over the top.
7. Return to the oven and bake for another 10–15 minutes until the top is caramelized and golden.
8. Cool completely before slicing.
