๐Ÿ‘‰Ingredients
 • All-purpose flour – 1½ cups
 • Sugar – 1¼ cups
 • Unsalted butter – 1 cup (softened)
 • Eggs – 3
 • Desiccated coconut – 1¼ cups
 • Coconut milk – ¼ cup
 • Baking powder – 1½ tsp
 • Vanilla essence – 2 tsp

๐Ÿ’‍♂️Instructions
 1. Preheat oven to 180°C (350°F). Grease and line a round cake tin.
 2. Cream butter and sugar together until light and fluffy.
 3. Add eggs one at a time, beating well after each addition. Mix in vanilla essence.
 4. Sift flour and baking powder together.
 5. Fold dry ingredients into the batter, alternating with coconut milk.
 6. Gently fold in desiccated coconut.
 7. Pour batter into the prepared tin and smooth the top.
 8. Bake for 40–45 minutes or until a toothpick inserted comes out clean.
 9. Cool completely before frosting or serving.
